Baked Chocolate Doughnuts

Hey There!

After viewing our cabinets in search of chocolate and not finding much, I decided to bake something mega chocolatey – and then I remembered we haven’t had doughnuts in a while. 😉 I used this Baked Chocolate Donuts Recipe, and it is phenomenal! I made these doughnuts Gluten-free, as I do with all of my baked goods, and the chocolate flavor masked the taste of the GF flour really well. The consistency of the doughnut was perfect: fluffy, but still thick. I highly recommend this recipe to anyone with a major love for chocolate! 😛

I used the glaze recipe included, and it was delicious!

I had loads of fun decorating them!

In the end, they taste amazing – you can’t go wrong with such a high concentration of chocolate! 😉😋

Chocolate Chip Pumpkin Bread

Hey There!

Since it is starting to get cold (at least where I live), I wanted to make some festive desserts for Fall. I was perusing my baking books and stumbled upon a chocolate chip pumpkin bread recipe in a Sally’s Baking Addiction Book, and decided to try it out.

This pumpkin bread is SUPER moist, and the chocolate chips make it extra rich. I made this bread Gluten-Free, due to some allergies, and you would never know: the pumpkin and chocolate mask the GF flour taste. This recipe was easy and didn’t take too long – but it tasted amazing!

I also added some cinnamon cream cheese icing on top, just for fun, and I’m very glad I did! It added some extra texture. 😉 I used the Icing Recipe included with my favorite pumpkin cupcake recipe (it’s foolproof).

I am pleased to say that my dogs found the icing delicious!

Welcome Fall: Pumpkin Cake

Hey there!

Happy Fall! I’m super excited for the new season, and all the yummy baked goods that come with it! 😉 I apologize for not posting anything in a while, I’ve been super busy lately… but I’m planning for more posts soon to come! 😀
I love pumpkin cake. I’ve made it so many times before, with the same recipe every single time! I used this recipe for Pumpkin Cupcakes and Pumpkin Layered Cake: and I’ve used the icing as a go-to recipe for almost all of my cakes! It is a Flawless Pumpkin Cake Recipe that tastes delicious and is super moist – plus, it’s super easy to make, paired with its smooth cinnamon cream cheese icing! ❤ I thought that since Fall was coming, I should make a Fall inspired cake to celebrate!
I have SO much fun decorating cakes! Decorating my creations might even be my favorite part of baking! 😉 I experimented with some techniques, and am super pleased with the result! I had a blast making the design, and I hope you enjoy. 🙂

Blueberry Covered Cheesecake

Hey There!

I love cheesecake. It is a favorite of my family’s, and making it is super fun!

For my Sister’s Birthday, I made a Captain America Shield Cheesecake, and she loved it. The recipe is so amazing – creamy and delicious! In fact, the recipe is so good, I made it again for a family Christmas gathering: it was a hit! I really like the methods used in this Perfect Cheesecake Recipe; they help it from cracking. 🙂

I normally cover to top of my cheesecakes with cherry pie filling (unless I make a design like the Captain America cake), but this time I thought blueberry would be a delicious variation! I tried a marbling technique, and am super pleased with how it turned out, plus it was fun. To complete my cheesecake, I had no other choice but to do something very violent: I whipped some cream! 😉 If you love cheesecake, I highly recommend this recipe with a fruit topping!

I made this Gluten Free by making the crust with GF graham crackers. I think the crust has a delicious taste, and is wonderful for those with allergies.

Coffee Cake

Hey There!

When I bake, I normally make desserts, such as layered cakes or cupcakes. But sometimes it’s nice to have some baked goods in the morning for breakfast. I was perusing Blog of All Trades and came across this Coffee Cake Recipe. The Cake pictured made my mouth water! It is delicious – the cake was light and fluffy without being too sweet, the crust on top was amazing, and the glaze was foolproof. My family and I enjoyed eating some for breakfast with a cup of milk!

I made my coffee cake Gluten Free, due to some allergies in my family. This cake expertly masked the GF flour taste that comes out sometimes in baked goods. This cake is perfect for breakfast, dessert, or bringing to someone’s house! ❤

I also got to test out some new baking supplies! 😉

Chocolate Covered Mini Dark Chocolate Doughnuts

Hey there!

Sometimes, baking can be a lot of work. And in the summer, turning on the oven can make the house too hot. I wanted to make some dessert the other day, but was considering these things, when I remembered I have a BabyCakes mini doughnut maker! I’ve used it 2 or 3 times before, and it works wonderfully! So far, the only recipes I’ve tried on it have been vanilla with some sort of topping (i.e. Powdered Sugar, Cinnamon Sugar, etc.). I decided I wanted to make some chocolate ones, and coat them with some melted chocolate. Looking in the cabinet, I noticed I had some dark cocoa powder – dark chocolate is one of my very favorite kinds of chocolate! – and so, I made some dark chocolate doughnuts. 😉

I found this Chocolate Doughnut Recipe, and it was DELICIOUS! Wanting to coat the finished doughnuts with chocolate, I decided not to make the glaze. They had a great texture, and will most certainly be made in the future! 😉

Homemade Peanut Butter Cups (Peanut Allergy Safe)

Hey There!

My sister has a peanut allergy that developed when she was little. So, she can’t have peanut butter – instead, we use a peanut butter substitute*. I felt bad to be eating peanut butter cups in front of her, knowing she wanted some. So, when I got the book Sally’s Baking Addiction by Sally McKenney and saw the recipe for peanut butter cups (which called for regular peanut butter), I decided I had to make a peanut-free version for my sister! ❤
I LOVE how these turned out! They taste just like popularly sold peanut butter cups, but better because they’re homemade. 😉 Next time, I will probably make them thinner, as the chocolate sort of broke off instead of melting due to the thickness. Overall, I loved these delicious chocolatey goods turned out. 🙂

Chocolate & Mint Cake

Hey There!

I love chocolate. Especially chocolate cake! I wanted to make a cake with different flavors than I normally make, so I don’t make the same thing every time. 😉 I know mint goes well with chocolate, and decided to try it!

I used my Favorite Chocolate Cake Recipe, which is super moist and flavorful. It is the BEST chocolate cake recipe! I found a Mint Frosting Recipe that looked good, and tried it. It was very good, but the mint was so strong. Next time, I’m going to try half –  if not a quarter – of the mint extract and see how it turns out. 

Overall, I think this cake was a success. I’m pleased with how the decorations turned out, and am happy with the classic combo of chocolate and mint! 😉

Chocolate Chip Cupcakes with Buttercream

Hi There!

I got the urge to bake (not unusual 😉 ) the other day, but wasn’t sure what to make. I realized I hadn’t made cupcakes in a while, and thought “Why not?”

I found a recipe for Chocolate Chip Cupcakes, and they were delicious! They had a great texture. Next time, I will probably add a tiny bit more sugar, but that’s just my preference. 🙂 

The buttercream recipe I had been using was a little too sweet for me, so I haven’t made buttercream in a while… I found a new Buttercream Recipe, and it is amazing! It’s not too sweet, and has a great consistency. I wanted to go all out with the icing, so I decided to make some bright colors: orange and green! After icing them, my sister said they looked like Cacti! I remembered I had tiny candy flowers, so I added some on top for some extra cactus flair! 

I attempted to fill the cupcakes a little with some of the buttercream, but I didn’t make a big enough hole, and so it didn’t really do much, unfortunately. 😦  That’s ok, because I can always try again; there’s always a first for everything! 😉

Floral Dark Chocolate Cherry Cake

Hey there! 😉

I love cake decorating, and sometimes I want to bake a simple cake so that I can spend more time on the decorating. I love this Chocolate Cake Recipe, I have used it many many times before… such as for my Chocolate Birthday Cake, Chocolate & Orange Cupcakes, and my Three-Tiered Chocolate Heart Cake. This recipe is foolproof, and super easy.

I used my favorite cream cheese icing recipe, that happens to be included with a Pumpkin Cupcake recipe that I have used several times, too. 😛 I simply omitted the cinnamon, and iced away! 😉

I used some cherry pie filling with a light syrup for some extra fruity flavor. I spread a layer of icing in the middle, a good amount of the cherries on top, then added the second tier.

I also got a turn table for cake decorating, which makes the whole process so much easier! The table came with two icing spreaders and three icing smoothers. They work wonderfully! 😀 I am very happy with how this cake turned out, and highly recommend trying the recipes above!
