Chocolate Chip Cupcakes with Buttercream

Hi There!

I got the urge to bake (not unusual 😉 ) the other day, but wasn’t sure what to make. I realized I hadn’t made cupcakes in a while, and thought “Why not?”

I found a recipe for Chocolate Chip Cupcakes, and they were delicious! They had a great texture. Next time, I will probably add a tiny bit more sugar, but that’s just my preference. 🙂 

The buttercream recipe I had been using was a little too sweet for me, so I haven’t made buttercream in a while… I found a new Buttercream Recipe, and it is amazing! It’s not too sweet, and has a great consistency. I wanted to go all out with the icing, so I decided to make some bright colors: orange and green! After icing them, my sister said they looked like Cacti! I remembered I had tiny candy flowers, so I added some on top for some extra cactus flair! 

I attempted to fill the cupcakes a little with some of the buttercream, but I didn’t make a big enough hole, and so it didn’t really do much, unfortunately. 😦  That’s ok, because I can always try again; there’s always a first for everything! 😉

Triple Chocolate Cupcakes

Hey There! 😀

I love chocolate. It’s hard not to! 😛 I have taken a little break from baking, and wanted to make something DELICIOUS! I also wanted to try making chocolate icing, because I’ve never done that before. Ta-da! Triple Chocolate Cupcakes sounded like a plan to me! 😀

I used this Chocolate Chip Cupcake Recipe for the first time, and let me say: it is YUMMY! It has a nice consistency — it was a moist, thick, and delicious cake. The recipe said it would make 12 cupcakes, but I got 18 out of it…

Even though the recipe for the cupcakes had a chocolate cream cheese icing recipe already in it, it looked a little too complicated at the moment.  I let my Dad taste the Chocolate Icing right after I made it, and he said it was “the best icing I’ve ever had!” ❤ Clearly, not much more needs to be said. 😉

I made these Gluten-Free — like everything else I make — and they certainly did NOT taste GF. I’ve found that a strong flavor (like chocolate) can really disguise the taste of Gluten-Free flour. All-in-all, these cupcakes were AMAZING! ❤

Cakey Sugar Cookies

Hey there!

I love sugar cookies. Who doesn’t? They taste delicious, and are a classic.

Whenever you walk into the bakery section of the grocery store, there are always several boxes of soft, cakey sugar cookies with icing and sprinkles on top. I wanted to make them for myself, because everything is better homemade. 😉

I found this Soft Cakey Sugar Cookie Recipe at Sally’s Baking Addiction, a great baking website with awesome recipes (like the Rainbow Sprinkle Cookies). I made them Gluten-Free, and they tasted very yummy! I used some leftover icing from my Chocolate Heart Cake, with my all-time favorite Buttercream Icing Recipe, and these cookies went wonderfully with them. These cookies are great for dipping into coffee or tea. I loved these cookies, and I’m sure you will too. 😀

Three-Layer Vanilla & Cherry Cake

Hey There!

For a while I have wanted to make a cake with fruit in the center, like the cakes you can order at a bakery. Today I finished a Three-Layer Vanilla & Cherry cake, using my favorite Vanilla Cake recipe and Buttercream Frosting recipe!

I originally intended to make a two-layer cake, but I had some left over and decided to make another layer. I doubled the recipe, not sure if it would have enough for two layers on its own. 🙂 I made it Gluten-Free, and love how this cake tastes!

For the Cherry fruit filling, I used a 21 oz can of Cherry Pie Filling. I first put a layer of icing on the cake top, then added the cherries, and finally the next cake layer.

I love how this cake turned out — I love decorating cakes, it’s so much fun! I had a bit of input and help decorating the cake from family, and am very happy with the finished result. 🙂

Three-Tiered Chocolate Heart Cake

Hello!

Yesterday, I was busy. I started baking around nine o’clock in the morning, and finished baking at one to two o’clock in the afternoon. I took me so long to bake because I was making a three-tiered chocolate heart cake!

I used the Best Chocolate Cake recipe from Cake Whiz, and this recipe will not disappoint. I made it Gluten-Free, and my family said that “It doesn’t taste Gluten Free; it tastes like a cake you would pick up from a bakery.” Also, we agreed that this cake is super moist!

The recipe said to use the Buttercream Frosting recipe, so I decided to go for it… this icing tastes like “official” icing – super fluffy and perfect! It is now my new favorite icing recipe! ❤

I decided to make a light mint-blue colored icing for decorating… I love how it turned out! I can’t wait to try making these recipes again! 🙂

Jumbo Vanilla Cupcakes Review

Hello!

While rummaging through my cake/cookie pan cabinet, I found a Jumbo Cupcake pan. Vanilla cupcakes were the first thing that came to mind – but not just any vanilla cupcakes, the Best Vanilla cupcakes EVER! I had seen a vanilla cupcake recipe on Pinterest, and it looked amazing. Turns out, it is my new favorite vanilla cake recipe! I made them Gluten-Free and Jumbo sized, and my family LOVED them!

Cream cheese icing is my favorite type, but I wanted to try something different. I found (looking on Pinterest again) a recipe for Cream Cheese Buttercream Icing, and it looked delicious. It tastes great! Next time, I would use 3 3/4 cups of Confectioners’ Sugar instead of 4 1/4, because it turned out VERY sweet… which isn’t a problem, but it slightly over-powered the delicious cake.

I would most certainly make both the cupcake and the icing recipe again, and highly recommend them!
