Chocolate Chip Cupcakes with Buttercream

Hi There!

I got the urge to bake (not unusual 😉 ) the other day, but wasn’t sure what to make. I realized I hadn’t made cupcakes in a while, and thought “Why not?”

I found a recipe for Chocolate Chip Cupcakes, and they were delicious! They had a great texture. Next time, I will probably add a tiny bit more sugar, but that’s just my preference. 🙂 

The buttercream recipe I had been using was a little too sweet for me, so I haven’t made buttercream in a while… I found a new Buttercream Recipe, and it is amazing! It’s not too sweet, and has a great consistency. I wanted to go all out with the icing, so I decided to make some bright colors: orange and green! After icing them, my sister said they looked like Cacti! I remembered I had tiny candy flowers, so I added some on top for some extra cactus flair! 

I attempted to fill the cupcakes a little with some of the buttercream, but I didn’t make a big enough hole, and so it didn’t really do much, unfortunately. 😦  That’s ok, because I can always try again; there’s always a first for everything! 😉

Peanut Butter & Jelly Cupcakes

Hi There! ❤

Whenever I watch baking competition shows, the contestants almost always fill the inside of their cupcakes with something interesting. I’ve never done that before. And so, feeling very ambitious one day, I decided to try it. That’s when I made these delicious PB&J cupcakes. I made Simple Vanilla Cupcakes, filled the inside with some tart jelly, and made peanut butter frosting for the top. 😛

Due to family allergies, I made these cupcakes Gluten Free. Also, one of my family members can’t have peanut butter, due to an extremely severe allergy. My family found out about a peanut butter substitute, called Wowbutter. I used this instead for the icing, and it worked perfectly, as if there wasn’t even a difference. ❤ This is DEFINITELY one of my favorite Frosting Recipes.

My family said that they tasted very good, but that they needed more jelly inside. Now I know what to do in the future! 😉 I am so happy with how these cupcakes turned out. 🙂

Triple Chocolate Cupcakes

Hey There! 😀

I love chocolate. It’s hard not to! 😛 I have taken a little break from baking, and wanted to make something DELICIOUS! I also wanted to try making chocolate icing, because I’ve never done that before. Ta-da! Triple Chocolate Cupcakes sounded like a plan to me! 😀

I used this Chocolate Chip Cupcake Recipe for the first time, and let me say: it is YUMMY! It has a nice consistency — it was a moist, thick, and delicious cake. The recipe said it would make 12 cupcakes, but I got 18 out of it…

Even though the recipe for the cupcakes had a chocolate cream cheese icing recipe already in it, it looked a little too complicated at the moment.  I let my Dad taste the Chocolate Icing right after I made it, and he said it was “the best icing I’ve ever had!” ❤ Clearly, not much more needs to be said. 😉

I made these Gluten-Free — like everything else I make — and they certainly did NOT taste GF. I’ve found that a strong flavor (like chocolate) can really disguise the taste of Gluten-Free flour. All-in-all, these cupcakes were AMAZING! ❤

Chocolate Cupcakes With Orange Icing

Hey There!

I love watching the Netflix only show “Sugar Rush.” It really inspires me to bake, and it helps come up with some flavor combos. I recently watched an episode, and the theme was “The Outdoors.” One of the teams created a chocolate cupcake with orange curd and spicy icing — I personally don’t like my food too spicy (I’m still working on liking it 🙂 ), and I’ve never made curd before, so I made an easier version.

I made these chocolate cupcakes Gluten-Free, and my family said that if I hadn’t told them it was GF, they would never have guessed it. It is my new-favorite Chocolate Cupcake Recipe, and it was fairy easy, which is a plus.

I made my Orange Flavored Icing in white and orange, and swirled the two colors together. This was a very tasty icing recipe, and I would definitely make it again! 🙂

Ombre Berry Cupcakes

Hey there!

I recently had a friend over, and wanted to make cupcakes — but I wanted to make interesting cupcakes, not just chocolate or vanilla. I found a recipe for Raspberry and Blueberry Cupcakes, but didn’t have any blueberries… looking in the freezer, I found frozen raspberries and blackberries, so I substituted the blackberries for blueberries, and they tasted delicious!

I made these cupcakes Gluten-Free, and I couldn’t taste the GF flour at all.  I have found that a more intense flavor (like dark chocolate, berry, or cinnamon) can help mask the GF taste. I used my Favorite Cream Cheese Icing Recipe, from my Pumpkin Cupcakes a while ago, only omitting the cinnamon. (That wouldn’t taste very good with berries) 😉

I didn’t have store-bought buttermilk handy, so I used this recipe to make Buttermilk. I doubled the cupcake recipe, and got 36 cupcakes. I loved their taste, and am very pleased with how they turned out! 😀

Jumbo Vanilla Cupcakes Review

Hello!

While rummaging through my cake/cookie pan cabinet, I found a Jumbo Cupcake pan. Vanilla cupcakes were the first thing that came to mind – but not just any vanilla cupcakes, the Best Vanilla cupcakes EVER! I had seen a vanilla cupcake recipe on Pinterest, and it looked amazing. Turns out, it is my new favorite vanilla cake recipe! I made them Gluten-Free and Jumbo sized, and my family LOVED them!

Cream cheese icing is my favorite type, but I wanted to try something different. I found (looking on Pinterest again) a recipe for Cream Cheese Buttercream Icing, and it looked delicious. It tastes great! Next time, I would use 3 3/4 cups of Confectioners’ Sugar instead of 4 1/4, because it turned out VERY sweet… which isn’t a problem, but it slightly over-powered the delicious cake.

I would most certainly make both the cupcake and the icing recipe again, and highly recommend them!

Mint Cupcakes Review

Hello!

When I was little, I never liked the taste of mint. Ever. It always was too strong for me – whether it was mint toothpaste or a mint candy, I couldn’t stand it.

Now, I don’t mind it – actually, I quite like it. 🙂

A few days ago, I found a recipe in the book called Crazy About Cupcakes by Krystina Castella for Mint Cupcakes. I’ve never tried a mint flavored cake before, so I thought it looked interesting. They turned out wonderfully! The cake was the perfect consistency (which was relieving, since I made them Gluten-Free).  I would definitely make these delicious cupcakes again.

Pumpkin Cupcakes

Hello!

My favorite cupcake recipe I have ever made is probably Pumpkin Cupcakes.  They taste so good, and they look wonderful.  The recipe came with a separate Cinnamon Cream Cheese Icing recipe, and that is my FAVORITE icing recipe ever! I use it all the time for different recipes, just omitting the cinnamon. I made the cupcakes Gluten-Free, and they turned out great! My family and I devoured them, they were gone in about four days! 😉

I rate this as a Five-Star recipe!

Lemon Cupcakes Review

Hello!

Yesterday I had lots of fun making Lemon Cupcakes from a cook book called Crazy About Cupcakes by Krystina Castella. There are TONS of recipes in the book, and they all look amazing! I substituted GF flour for regular flour, and they turned out wonderfully with no issues.

Although, when icing the cupcakes, I had a bit of a catastrophe – the icing bag burst, and there was a mess everywhere! 😦

No worries – the cupcakes still taste good, even if they didn’t get a Five-Star presentation!
