Easy Eggs & Rice Breakfast

Hey there!

I always seem to have leftover rice from last night’s dinner. So, I came up with a super easy delicious breakfast that uses leftover rice!

Ingredients:

  • 2 Eggs
  • As much rice as you want — I use about 1/2 cup to 1/3 cup
  • Butter
  • Grated Parmesan Cheese
  • Salt
  • Pepper

Go:

  • Butter the bottom and part of the sides of a microwavable ramekin.  Crack your eggs into the ramekin and microwave on high for 35 seconds. Open the door to let some of the heat out.  Microwave again on high for about 15-20 seconds, or until both eggs are cooked all the way.
  • While your eggs are cooking, place rice in a microwavable cup with some butter. Take your eggs out of the microwave (they should be pretty hot) and microwave the rice on high for about 25-30 seconds, or until very warm.
  • Pour rice over eggs and add cheese, salt and pepper to the top. Stir to let some of the heat out.  Let cool before eating. Serve with a glass of milk. Enjoy!
  • Variations:  Try adding cut tomatoes or spinach for a delicious variation! Go wild: you can add pretty much whatever you want.
